Quick and Easy Paleo Recipes

Need some fast easy paleo meals? Well, I have a couple of recipes here and they are pretty much a staple in my daily diet. These days I have little time and interest in preparing fancy-schmancy paleo diet meals – the kind that requires you to use a shed load of ingredients, most of which I’ve never heard of and not even sure how to pronounce.

The last several months, I’ve been playing around with a range of quick and easy paleo recipes such as oyster mushrooms with scrambled eggs, BBQ fish fillets stuffed with pine nuts & onion, meatball and baked veggies, and many more to list. These dishes are downright fantastic!

Simple & Flavorful Paleo Pork Medallions!

You’re going to need:

4 pork medallions and 2 tablespoons of olive oil

For the salad:

2 oranges peeled, and each one is cut into 12 to 16 thin wedges
1 thinly sliced, medium-sized fennel
1 radicchio leaves separated
4 tablespoons of lemon juice
6 tablespoons olive oil

Preparing the dish:

(i) Get a bowl and drop all the salad ingredients in there. Mix them thoroughly.

(ii) Cook the pork medallions in a frying pan with two tablespoons of olive oil on low heat. Fry each side till it turns golden brown, which should take about 5 minutes.

(iii) Remove pork medallions from the pan and serve them up hot with the salad mix.

There you go…one tasty paleo meal that’s a snap to make. I’ve tried quite a number of quick and easy paleo recipes, and this one deserves 10 full points on the easy-to-prepare scale. Taste-wise, I’d give it 7 out of 10.

Healthy Cajun Fish Fillets Walsultnach Salad Combo!

You’re going to need:

2 fish fillets
2 tablespoons of Cajun seasoning
A tablespoon of olive oil

For the salad:

200g baby spinach
1/3 cup of sultanas
2/3 cup of walnuts
¼ cup of pitted and halved black olives
A tablespoon of avocado oil

Preparing the dish:

(i) Preheat your fan-forced oven to 350 degrees Fahrenheit

(ii) Mix the Cajun seasoning and olive oil in a small bowl. Grab a baking paper and use it to cover the surface of the oven tray. Now, plop the fish fillets on the tray and season them with the Cajun seasoning mix.

(iii) Pop tray in the oven and bake fillets until they’re cooked through. That might take approximately 15 minutes. Remove and set aside.

(iv) Use another tray and baking paper to lightly toast the walnuts in the oven (5 minutes give or take). Remove walnuts from the oven, drop them in a bowl together with the remaining four salad ingredients, and mix thoroughly.

(v) Enjoy the Cajun fish fillets with the ‘walsultnach’ salad mix!

Paleo Cod Fish Recipes

About a month ago, I tried creating my own paleo cod fish recipes because I suddenly had this urge to go into creative mode. I thought I could come up with a bunch of awesome tasting, drool inducing fish dishes that will blow everyone away.

Unfortunately, my experiments didn’t really work out :( The dishes I came up with were pretty bland on the whole. So I disabled my creative mode (just temporarily) and decided to try out a few paleo cod fish recipes from a couple of download-only cookbooks.

The recipes in the books are pretty good. There are beef, chicken, and fish recipes for paleo diet. Plus, a variety of recipes for paleo soups, desserts as well as snacks. You can check out the books by using the link below.

Anyway, I would like to share a couple recipes with you. I got these recipes from the book; of course…so here you go.

Recipe #1: Cod Fish with Lemon and Chili Combo

Ingredients:

2 cod fish fillets, 1/3 cup of lemon juice, 2 teaspoons of chopped chilies, 4 cups of spinach leaves, 4 tablespoons of olive oil, salt & pepper to taste.

Preparation: 

A) Preheat your fan-forced oven to 350 degrees Fahrenheit.

B) Combine the remaining ingredients (except for the spinach leaves) in a small, clean bowl.

C) Use half of the chili and lemon mixture to coat one cod fillet. Get a large sheet of aluminum foil, and put 2 cups of the spinach leaves in the center of the foil. Drop the coated cod fillet on top of the spinach leaves.

D) Now you can fold the edges of the aluminum foil entirely around the fillet. Do the same thing with the 2nd cod fish fillet. Once you’ve prepped up both fillets, put them on a baking tray.

E) Pop the tray in the preheated oven and bake until the fillets are fully cooked. That’ll take approximately 15 minutes. Enjoy your meal!

Here’s another recipe that you might want to have a go at. I think it’s one of the simplest fish recipes for paleo diet. A neighbor of mine really loves it. She thinks the dish tastes “really awesome”! Well, I wouldn’t call it awesome, but it sure isn’t bad in the taste department. Plus, the dish is utterly a cinch to prepare. 

Recipe #2: Cod Fish with Mushroom and Turmeric Combo

Ingredients: 

2 cod fish fillets, 2 tablespoons olive oil, a teaspoon of freshly ground turmeric, 1 cup of diced mushrooms, a tablespoon of lime juice, salt and pepper for added flavor.

Preparation: 

A) Once again, you’re going to need a fan-forced oven. Also preheat it to 350 degrees Fahrenheit.

B) Cover the oven tray with baking paper, and plop the 2 cod fillets on top. Now, proceed to drizzle both fillets with lime juice and olive oil. Ensure the drizzling process is done in an even fashion.

C) Place the remaining ingredients on top of the fillets, then bake away for 15 to 20 minutes. That should be enough to fully cook the fillets.

You know, I don’t feel like coming up with my own paleo cod fish recipes. Someday perhaps…I failed miserably so I’m a little reluctant to get too creative when it comes to preparing paleo diet meals.
